Pink, Blue, and Cheesy

I'm loving this computer!!!  Our old one had to stay in one spot on our livingroom table because we had it rigged to stay charged.  This  one: FREEDOM!  I can take it in the kitchen, blog  on the couch...

I thought it was about time to give my blog some color!  life!  PICTURES.  I did some  cup-cake baking Sunday night to announce the arrival of baby Ivey to my co-workers.  It was so fun.!  Probably the neatest baking project I've done ;>

 

 



















They were so cute!  My pink and blue little baby-cakes :-->  They were almost eaten all up too!  It took everyone a few minutes to get it but finally one of our V.P.'s said, "Is there some kind of signficance to there being big ones and little ones?"  I said, "WHAT COLOR ARE THEY!?"  Finallly all the women in my room went in and looked at them and got it.  They were surprised!

A cheesy announcement?  I think not.  Cheesy enchiladas?  I think YES.

I'd bought stuff to make chicken enchiladas for Ryan and I this week and decided tonight was as good as any.  And I had the energy to cook.  I listened to my Frank Sinatra Pandora station while I kind-of threw together this non-recipe.  You really can't mess up enchiladas, my husband told me.  It's tortillas, meat, and cheese!  Um, and some other stuff.

White flour tortillas.  Diced + seasoned grilled george foreman chicken.  Sour cream.  Salsa. CHEESE.









I poured mild sauce in the bottom of an 8x8 pan and then filled 5 tortillas with salsa, sour cream, chicken, and cheese.  Rolled them up and stuffed em in the pan.  Poured the rest of the sauce on top and covered with more cheese!  I seriously liked these and will be making them again.

I need to throw something in the oven now for a GIRL'S NIGHT tomorrow night!  Pizza, Games, and Dessert with the girls in my Sunday School class.  Can't wait!

Loving your transition from cheesy cupcakes to cheesy enchiladas. :) Those look YUMMY. I prefer flour to corn tortillas any day. I'm glad you're back!

Love your blog! Now I want a cupcake though... ;) Thanks for coming last night. It was wonderful visiting with a fellow 'normal' homeschooler. ha!
