Meatless in March

Oh my gosh ya'll. I feel like a free woman.  I don't want to get lengthy here but basically: I went to a surgeon today and he said my elbow is gonna be fine! There may or MAY NOT have been a fracture but I don't have to wear the sling anymore and I can ease back into using my left arm.  Hooray!  It is still sore though and I can't just thrown it around like my right but at least I know I'm ok. :>  Guess I'll have to hold off on the downward dogs for a bit :-(

Other great things going on in my life:

*Friends getting houses!  We made it through Monday!  The season finale of The Bachelor is tonight!  I got some super cute silver Steve Madden sandals on sale at DSW that I can't wait to wear once it warms up!  It's not supposed to rain tomorrow!  Ryan's finally picking up new contacts!  It's March!!!*

March is only my most favorite month of the year. :>  I turn 27 in nineteen days so I better start soakin up life ;--)  The 10th is also Ryan and I's anniversary.  3 years of wedded bliss for us younguns.  And March marks the beginning of Spring!  The 20th...which is also my b-day!  One big happy circle, it is.

I randomly remembered yesterday...that last year at this time, Jenna decided to hold a "Meatless in March" challenge.  I only made it half way through I think...Ryan and I ate at The Melting Pot for our 2-year anniversary and well, lets just that I ate some meat!  But yeah, I've decided to try it again this year!  A couple of my aunts are going to do it with me too!  Here's just a couple of reasons why I'm doing this:

*I've been feeling like I'm eating too much junk lately.  Not enough fruits.  Not enough vegetables.  When you aren't eating meat, you can incorporate more whole grains, more veggies, more beans, and more fruit!

*Meat is expensive!  Ryan's not going meat-less but maybe I can save a few bucks by trying some new recipes.

*I do like the taste of meat. And I've never been one to think about porky the pig as I make a deli ham sandwich.  But sometimes...yes every now and then, it weirds me out.  I think, I'm eating animal flesh! :/  I wonder where all this chicken has been... (and after seeing "Food, Inc") I wonder what all has been PUMPED INTO this thing.  Yikes.

*I'm a food nut.  I love food.  I LOVE NUTRITION.  I love thinking about ways I can improve my diet/health.  I love changing things up, challenging myself, and not getting stuck in ruts.  All good reasons to try something new.  It's just 1 month.!

So yeah, there's probably A LOT more great reasons to "go veg" than that but that's off the top of my head.  Wanna join me??  I dare ya ;>

I'm thinking I'll definitely be posting vegetarian meal ideas...feel free (PLEASE!) to give me your favorite meatless meal creations! Do you have a veggie lasagna that you LOVE?  Black bean burgers that can't be beat?  I feel totally confident in breakfast but I know I need some lunch and dinner ideas.  Bring em on!!  A girl can't last long on bean burritos ;>

Oh and today for lunch:  I had a Kashi frozen dinner!  It was pretty good!  Whole wheat penne pasta with a pesto sauce + peas and peppers.  Yum.

That is a cool idea. I've had an idea of trying to eat less meat bounce around in my head, but I plan on saving it for a later effort. I honestly don't eat a ton of meat right now anyways...much less than I used to so I'm still kind of adjusting to that. And yay for what appears to be an awesome March!

I like your meatless March idea. Feel free to drop by my veggie blog for recipes. One of the biggest hurtles for dropping meat is learning how to think about food without meat at the center. I suggest going to a local library and picking up all the vegetarian cookbooks you can find and read through them for ideas - it helps get the creativity flowing.I look forward to hearing what kind of meals you come up with.
