I loved tonight's dinner. I was inspired by my boss who had dinner cooking in her crock-pot up in our work kitchen. I made some brown rice and grilled some chicken on the George Foreman. Diced that up and mixed it in with the rice along with some shredded cheese and a little salsa (should have added more!) I had mine with sour cream and a side of broccoli 'n' cheese. Delightful.
Two more work days! Ryan and I are headed to the lake this Memorial weekend! I can't wait to get some sun and chillax. ;->
