Chocolate Avocado Pudding

That time I made pudding out of avocados.

Please save your judgement.


I'd tried a similar version before so when I came across this recipe and knew I had dates needing to be used, it was a no-brainer. Plus, I like healthy non-traditional recipes. And I got to use my nifty high-powered food processor which is always fun!


We had some interesting conversations around it for sure.

"Kati, WHAT is in this cup in here?"

"It's dates I have soaking for a recipe."

Then after I'd made the pudding, Ryan asked:

"Do we have any avocados?"

"No, because I used them in the pudding."

"Oh, NO. I am not eating pudding with avocados."

Wimp. :>


I thought it was yummy and I would totally make it again. You could even add some honey or maple syrup to amp up the sweetness but I enjoyed it as is.

Smooth. Creamy. Chocolaty. And loaded with healthy fat. Try it. You might surprise yourself.

Chocolate, Yoga, FREE!

So. I haven't really used this blog much to promote my business as a health and fitness coach...but. I wanted to let my readers in on a few things going on next week that I am super pumped about! I'll make it short & sweet. :-)

Spaghetti Squash Boats and Little Words of Wisdom



 I made a new dish last night. Kinda. Karlyn and I love a good spaghetti squash but Ryan's not a fan so we took the opportunity of him being out of town to have it for dinner. I had seen this recipe on Pinterest and thought I'd simplify it some - although I think the original recipe looks DELISH!

I split the huge squash in half (this is super hard sometimes so be careful with the knife!) and roasted it at 425 for an hour, although I should have cooked it longer. Scraped out my seeds and started pulling the noodles out with a fork. I made Karlyn's separate since I knew she wouldn't want spinach. I combined my "noodles" with Classico brand tomato & basil sauce, browned ground turkey that I'd seasoned with salt, pepper, and fresh garlic + some wilted spinach. Tossed colby jack cheese on top and broiled it until it looked right.

IT. WAS. SO. GOOD.

I had leftovers tonight, minus my squash boat. Definitely a keeper recipe and the combination / topping possibilities are endless. 

Beef, turkey. Ricotta, mozzarella cheese. Salsa, black beans, corn, cheese. Pepperoni, onion, green bell pepper. What would you like in your boat? ;-)

I definitely ate too much and the less than adequate belly space I have left was f.u.l.l.

My four year old is going on fourteen. The stuff she says...it blows me away. Last night we were getting ready for bed and she was hanging out in my bathroom while I soaked in some epsom salts - my almost nightly ritual. She was getting to sleep in the big bed with daddy being gone.

I decided to confide in her. I said, "Karlyn, I'm scared a little. I'm kind of scared to have another baby. And to have two kids." She didn't blink. Didn't laugh. Just stood there and said,

"Mom, just take it easy. Just take it one step at a time...and just try it."

 It was amazing! She knew exactly what to say and truthfully I sometimes feel like the Lord speaks through her. I think she and I are going to grow so much closer over these next few months being home together and I will treasure that time. Not every day will be perfect - we both agreed that yesterday was kind of a bust. But I told her today, some days will be more fun than others.

Some days we'll get out of the house and do things. Some days will be like yesterday where I piddle around the house wondering whether or not I should pay $60 for her to go see the chiro because her head hurts, she stays in her pajama shirt where both breakfast and lunch stains land, and we leave the park crying after ten minutes because she wanted to swing, but I messed her up, but I was only trying to help, and no, she didn't want to do anything else but swing. #stayathomemomadventuresday2

I'm so thankful for her little life and the person that she is. Thankful that she eats my spaghetti squash, and blessed to have her speak words of life into me at four years old.

Shakeology ~ and a Giveaway!

So what IS Shakeology? 

Don't worry. That's what I wanted to know right off the bat too. As excited as I was about the Beachbody opportunity and the amazing workout programs they had to offer, I wanted to be 100% on board with all of it. I knew that there was no way I could tout the benefits of a shake I myself didn't love. 

It's very important to me that I know what's IN the nutritional supplements I choose to take for a couple of reasons. 
  • I don't want to just throw random ingredients into my body and hope for the best.
  • I want to be sure that my money is going towards the best things for me.
  • I've always been extra sensitive to supplements. This is in part due to the MTHFR genetic mutation I have.

Because of this, I will always scrutinize and research the ingredients of any new product I decide to take. Lastly, I count on my own body to give me feedback as to whether or not "xyz supplement" is going to work for me. This is so important I believe! And I'll give you an example why.

Being into health and fitness I've tried many different whey protein powders over the years. Experts say it's one of the easiest things for our bodies to absorb post-workout - whey that is - because it's easily absorbed by our muscle cells that are open and ready for replenishment after being torn apart during exercise. I never stayed with them long though because I could tell that my body couldn't handle it. Immediately after making a shake (that may or may not taste so great - usually not!) I would get gassy and bloated. Fun right? If you know anything about nutrition you know that gas and bloating directly after a meal means your body isn't digesting and absorbing what you just took in. So what is the point of spending X amount of dollars on a protein powder that my body isn't even going to reap the benefits of? No point.

I loved the ease and simplicity of blending up a shake but I never came across one that I actually looked forward to, felt a difference from drinking, and even craved.

Until Shakeology! Ya'll, I'm going to be real with you. I'm not good at lying. I was always the kid in class who spoiled the joke the rest of the class tried to play on the teacher or who ruined a surprise for someone because I felt so vigilant about speaking the truth. I don't have it in me to tell you how great a product is, if I really don't think that it is. I can't say, "Shakeology has given me so much energy!" if I haven't seen a difference in that area. I can't chug something down each day for breakfast that I don't honestly think tastes good.

I started off with 4 sample packets - 2 Vegan Chocolate and 2 Vegan Tropical Strawberry. I chose the vegan over the regular for two reasons. 
  1. The above mentioned MTHFR that I have. Because of that, I need to avoid folic acid in my food and supplements. Shakeology is filled with vitamins and minerals that for most people obviously don't pose a problem, but for me, I needed to go with the vegan to avoid the vitamin fortification. (I take special methylated vitamins of my own.)
  2. Also like I said before, my body has never loved whey protein. (People with MTHFR often don't handle dairy well.) The vegan shakeology is plant protein based - perfect!

Being at the end of my first trimester, I was still having a hard time getting enough protein in due to a huge meat aversion. After just a few days, I truly began craving these shakes filled with protein and a slew of super foods and nutrition that my body just hadn't been getting the past ten weeks. Hello, nausea!

I even stretched out my samples until my first order could arrive. And I've been drinking them every day since, alternating strawberry / chocolate every other day. I add banana, peanut butter, fruit, milk, water, ice - and it transforms into this amazingly thick, frosty drink that has become my favorite part of the morning. And so quick and easy to drink as I drive to work.

I also DID noticed an increase in energy! Shakeology contains no caffeine but after just a few days, I really started feeling great. Energized is really the only way I can describe it and for a busy mom - energy is everything. I was making it further into the day before I felt tired and I just felt ALIVE. No gas. No bloating.

I could go on :-) But I'm going to stop for now and let you take a look at what really goes into each serving of Shakeology. We're talking protein, vitamins and minerals, antioxidants, phytonutrients, adaptogen herbs, prebiotics, probiotics, and digestive enzymes.

BEHOLD, The Lettuce Wich






I've been on kind of a sandwich kick. Except I can't eat bread. And I pretty much have been eating lunch out every day which is so not the norm for me but so goes the first trimester. Leftovers have been non-existent since I haven't been cooking and trying to pick out something in the morning to take was just not happening. I've worn out the gluten-free options (Wendy's baked potato and salad or Chipotle) around where I work and decided it sure would be nice just to have a sandwich.

Enter: the Lettuce Wich! I've had three now - one from Lenny's Subs and two from Which Wich. The Lettuce Wich is actually a thing on Which Wich's menu and I liked theirs better. I appreciated Lenny's making me one though! :-) Today's was my favorite. I got turkey, Swiss cheese, mayo, mustard, spinach, cucumber, tomato, pickles, salt and pepper. It's COLD too which fits my pregnancy palate right now. I thought I should try and make these at home but...I probably won't. ha.

If you're gluten-free or just really like lettuce, give the lettuce wich a try. You might like it! :>

Comfort Food ~ Whole 30 Style

I've decided that part of the fun *yes I said fun* of doing a Whole 30 is trying new recipes. New veggies. New combinations. New flavors!

I stumbled across an article by Melissa Joulwan of "The Clothes Make The Girl" listing her most popular recipes of 2014. Intrigued, I scanned it Sunday morning and was immediately drawn to one called Comfort Noodles. I mean, who doesn't love comfort food? Plus I was 12 hours into a major pouting session over some disappointing news. I had all the ingredients and got right to work.

I PROMISE you need to try this recipe! It was so, SO, good. Like, licked the bowl good. Do yourself a favor and go buy a spiralizer (or veggie peeler), zucchini, and almond flour (you should already have the rest) and whip this up. Make extra.

I only had 1 zucchini and 2 eggs, so that's what I worked with. I will definitely make the full recipe next time. I totally felt like I was eating some rich, creamy pasta dish with salty bread crumbs. Which sounds weird - but oh so yum.

My Journey to Health


I began writing this post in August of 2013 and finished it today.

I'd be lying if I said this post will be easy to write. After mulling it over in my head for weeks now, I have to begin. I've received help from too many other bloggers as I've searched desperately for answers and read just what I needed to at just the right time.

You might see the title and think, journey? She seems pretty healthy to me! And I guess in some regards, I have been healthy. I've looked healthy at least. But things are not always what they appear to be on the outside and that is so true when it comes to our health. This is going to be a bit long-winded but I will do my best to be succinct.

**It's going to be personal. It might be uncomfortable. So if you'd rather read a funny little entry on life with a toddler, skip this one. :> OK?**

~I'll start from the beginning. I grew up eating what I'd call a standard American diet. My mom cooked a lot but we also ate fast food at times...Sonic, Kentucky Fried Chicken. I ate oatmeal cream pies (mmm) and I don't really remember having any food "issues." I played high school sports and my cross-country coach encouraged us to give up sodas, so I did, no problem. I never did drink them regularly after that. I never had a weight issue. I had what I'd call a fast metabolism and I distinctly remember going out to Cici's for lunch during a week-long basketball camp and pretty much chowing down. My friends were kind of astounded. I remember my high school basketball coach telling me (half-jokingly) that I had better top 100 pounds before the next upcoming season. I'm pretty sure that was EARLY high school. I loved to eat, loved to be active, and life was good.

Fast-forward to college and I had to pick a major. Not right away, but eventually. I chose Exercise Sports Science because that's what I was interested in. Somewhere around my Sophomore year I'd say, I began to be interested in "health." Healthy living, healthy eating. I found these online fitness/diet forums that were full of girls talking about workouts and healthy meal ideas and I thought, wow, this is cool! This stuff gets me excited! I continued to learn and study exercise science and stayed active throughout college playing intramural sports. I really can't remember having any major health issues while in college. I do remember getting a little caught up in calorie counting. The funny thing though was that I was never trying to lose weight. I would just read Oxygen magazine where the fitness models ate these six 350 calorie, evenly-spaced-out meals per day of chicken, egg whites, and oatmeal so I kinda started thinking that's what healthy meant. I very much recall getting up early to open our school's gym at 5:00 am (I was a manager) and making my protein powder oatmeal with blueberries before I headed out the door. I know my roommate loved me!

After college, I interned at the Cooper Fitness Center in Dallas and immediately after took my first real job as a personal trainer at Larry North Fitness. Still no real health issues. I kept on eating a healthy diet and workouts were regular. While at Larry North, Ryan and I met and started dating. It sounds bad to say it, but around this time is when things started to go a little south. Of course I was over the moon about my new hunky boyfriend :> but I just didn't feel very good. I remember telling my mom, I just don't feel good a lot of the time. I'd eat, and then not feel great. I also at this time started suffering from what I'd call the only real episode of depression I've had. It was not fun. I think there were several contributing factors: I was living on my own in an apartment with a girl I really didn't know, working at a job I didn't like with odd hours (I had moved on from Larry North) dating someone seriously really for the first time ever - which was a good thing! But my over-analytic self was so tied up in figuring out if he was "the one" that I was stressing big time. I wasn't sleeping very well and I felt like I was walking around in a fog. I remember one time just laying in my bed, not wanting to get up, not even really wanting to go on.

The low point was me calling my mom from work one day as I was filing some papers...I felt like I might be having some kind of anxiety attack and I said, "Mom, you've got to help me. I need some help." She took me to a local doctor my dad had seen who asked me a few questions, me crying, and prescribed me an anti-depressant. Lovely. I know I didn't take it very long because it made me feel wonky. Slowly, somehow things started getting better. Ryan and I continued to date, I got a new job as a physical therapy technician with normal, regular hours, we got engaged, and I moved into a house with a couple of other girls. I was working out (hello, wedding!) and trying to eat right and for the most part I think things were good.

Fast forward. We got married! I took hormonal birth control for the first time, starting a few months before the wedding. The effects of being on "the pill" for a mere five months would continue to affect me for years afterward. It. was. awful. I turned into a not-so-nice person and had a myriad of unpleasant side-effects. One of them was sore breasts. And I'm not talking just a little sore. It was horrible. Every month from then on would not pass without me enduring a week to almost two weeks of painful, lumpy breasts that made it hard to wear a bra. I was miserable and PMS would turn me into a raging, emotional mess and the pain only added to that. I saw doctor after doctor, researched my eyes out, tried everything anyone suggested, and was told over and over that they didn't know what to do and it was "normal." Fibrocystic breast pain. And it was genetic, from my dad's side. I tried vitamin E, evening primrose oil, vegetarian diet, no chocolate, no caffeine. I would plan things around when I knew I would be sore because it was so uncomfortable. Somewhere in there I had a fibroadenoma removed from my left breast.

I was left with one ray of hope. I had an ob-gyn tell me that if I got pregnant, the soreness might go away. That my body might "re-set" so to speak and that post-baby, this might not be an issue. And...she was right. After Karlyn was born, I didn't suffer from the breast pain. Until I got pregnant again. That was when it came back and we went on to miscarry that baby. Back to the monthly pain. My periods weren't fun. I had ridiculous cravings and severe mood swings. Every month I would get canker sores inside my mouth that were brutal. I just always felt a little "off" a lot of the time, despite trying to eat what I thought was a healthy diet and regular exercise.

During the Fall of 2011 my co-worker started talking about an "Eat Real" challenge her CrossFit gym was hosting. All I had heard about "Paleo" at that point was that you ate MEAT! ha. I thought the whole Paleo thing sounded a bit dumb...just eating a bunch of meat?! But, always eager for new health/nutrition knowledge, I signed up. I still remember standing with my team that night talking about what we hoped to achieve during the challenge. I talked about how I hadn't been sleeping well and I wanted to kick some sugar cravings.

The challenge was tough. We ate meat, vegetables, fruits, and healthy fats. No salt. I lasted 25 out of the 33 days because Ryan had his second emergency surgery within just a few months of the first, after rupturing his spleen. I noticed positive changes. My mood felt more even, more stable. I slept a little better. I thought, man, this is it! This is what I need to be doing to feel better. I got off track, went back to eating the way I'd always had (what I thought was fairly healthy) and then would start eating Paleo again. The Summer and Fall of 2012 were rough. I  kept trying harder and harder to eat a strict Paleo diet and I kept not feeling good. I was dealing with insomnia, urinary frequency and bladder prolapse. My cycles weren't going smoothly (nothing new there) and I felt like my body wasn't working right. I honestly thought I was going crazy that summer. We had just gone through our first miscarriage (May 2012) and I was trying to recover emotionally. My insomnia was INSANE. I'm talking up all night, feeling wired, trying desperately to will my body to sleep on into the early hours of the morning. And then I got to go into work! I'm a little fuzzy now on the timeline but a couple of things happened in there. I started researching (again) to try and figure out what the heck was going on with me. I do know that on October 1st of 2012, I passed out at work. I felt awful that morning but went into work anyways. The hospital told me I had a bladder infection and sent me home. Super. I went to see my gynecologist and in tears told her I was falling apart. She sent me to her doctor, an internist who ran some blood work including a panel to check for celiac disease. It came back negative, but I was not convinced. See, I had already cut out gluten for several weeks before that and every thing I read about this kind of testing said you HAD to be consuming gluten to consider your results accurate. Why had I cut it out? This stupid rash. With all the Summer craziness had come a horrible rash on both of my legs that was oddly symmetrical. It itched bad and I kept thinking, am I using some new skin product? What the heck? I researched again, because it's what I do. I found a link to...gluten! So I stopped. Again. Bingo! The rash went away. I also went to a dermatologist a few weeks after cutting gluten (so it didn't look this bad by then) who gave me a prescription for some cream and told me it was probably just dry skin. Yeah. Try again.



Fast-forward. The rash went away and I still kept some gluten in my diet. (head slam) I decided to ditch the strict Paleo plan and added some foods back in. I want to add something here. I would later find out that gluten can play a big role in insomnia for those who are intolerant but just as huge I believe was me discovering how important carbohydrates are, even on a Paleo diet, and ESPECIALLY FOR WOMEN. Part of the reason my body was acting so crazy I believe was that I wasn't feeding it enough. I had convinced myself that beans were of the devil (not Paleo!) rice was out, etc. Even though I did NOT need the gluten, I did need more calories and carbs. I am so thankful for two websites who pointed me in the right direction at that time. 180 Degree Health and Paleo for Women. OK, back to the story. We found out we were pregnant in January of 2013. I specifically remember making re-fried bean quesadillas (flour tortillas!) to quell some of the nauseousness. It was a long 10 weeks. Or short. At what should have been ten weeks we found out we had lost the baby and my world shattered once again. My doctor assured me there would be testing this time. (They don't test you after you lose one.) I had about 16 vials of blood drawn one afternoon and waited to see what they would come back with. In the meantime, I was at it again. Researching. Reading. I kept finding things tying gluten intolerance to miscarriage. I had no idea what my test results would show but I decided once and for all to cut it out. If there was even a CHANCE this was messing with my body's ability to keep a baby, I was done with it. So on April 18th of 2013, almost one year ago, I went gluten free and haven't looked back. Not once have I regretted that decision. A few days later my test results came in.

I had MTHFR.

Let me spell that out for you. Methylenetetrahydrofolate reductase - And wikipedia tells us that it is the rate-limiting enzyme in the methyl cycle, and it is encoded by the MTHFR gene.

I'll be honest. I don't understand everything there is to know about MTHFR although once I knew I had it, I began learning. I have more to learn, but it was a start. Let me try to explain it how I understand it best.

People who have MTHFR can't absorb, process, and/or convert folic acid like they should. A body without MTHFR can convert folic acid (you know the stuff in your multi-vitamin AND found in most processed foods) into FOLATE and then use that. But with MTHFR you don't and not only can you not use it as effectively, the folic acid can store up in your body and become toxic. Because it can't go anywhere.

MTHFR is a genetic mutation and is passed down from your parents or parent. It is most commonly seen at two different locations: C677T and A1298T and you can have single or double copies. I was told mine is heterozygous C677T, meaning I have one copy that is mutated and one that is working. Side Note: After testing, we know that both of my parents have this. My mom has the A1 copy and my dad (though he hasn't been tested) has the C6 copy. I know this because that's the one that was passed down to me) Side Note 2: The C677T variation lends itself to cardiovascular issues (my dad) and birth defects/miscarriage (me). Side Note 3: It is estimated that half or more of the population has the MTHFR mutation in some form, but many don't know it.)

I'm going to save a more long-winded post on MTHFR for later and for the sake of time (holy moly) continue on with this novella. After reading me the results, my doctor's office told me I needed to supplement with methylfolate (the already converted form of folic acid), b-12, and take baby aspirin as soon as I got pregnant again. Also, from my own reading I learned that I needed to avoid folic acid. That meant in my vitamins and in my food. Hello gluten! It lined up 100% with what my gut (literally) had been telling me the whole time. Not only was my body NOT using the folic acid I kept shoving in, it was storing it up to toxic levels and causing who knows what kind of chaos.

I spent April and May of 2013 trying to figure out exactly what I needed to be taking. I'm still experimenting somewhat. We spent the second half of 2013 recovering from another baby loss as I tried to reclaim my health. My journey isn't over; we still want another baby. Babies! Although I now have my MTHFR diagnoses and some knowledge on how to proceed, I still have a few lingering issues and no promise of sustained future pregnancies. Hormonal imbalance still continues to be an issue. I do believe though that I have come a long way.

Why do I share this story? Because I feel compelled to. Because I hope to use anything I've gone through to help someone else. Because I feel like none of us go through hard times or situations, only for ourselves. Because I want to remember. Because someone else might be there too.

Gluten-Free Menu ~ For Company!


We don't entertain very much. Which was probably evident when I forgot to set out serving spoons I'm not sure why...it's just rare. But we decided to return the favor to some friends who had us over a few months ago. Ryan used to work with Allison and she and her husband have two adorable little girls that are right around Karlyn's age. They had so much fun playing together!

I planned a gluten-free menu and chose a couple of NEW recipes from my "Healthy" Pinterest board. I really need to start utilizing those 2,000+ pins more. :-0

It's always a good idea to try out new recipes for company right? One of Allison's girls said the food was "yummy in her tummy" but the other one wasn't too much of a fan. We dug out the applesauce. :> But all three girls ate up the dessert. It was DELISH. I've got to make it.

Remember my post on Karlyn not liking quinoa? Well, I just kept telling her that we were having "broccoli cheese." Two things the girl does like. She was a big fan and I've even served it again since then. Ryan ate some too. #QuinoaWin

The girls got to swim and even slide into the pool that we ghetto-rigged. :> I know we're going to have to get them together again soon. So glad for friends.

Conversations and Quinoa


These are conversations one might have overheard at our house last night:


Me: "We're having Quinoa."

Karlyn: "Keenya? I don't like keenya."


Ryan: "What's that?"

Me: "Quinoa. And don't even say anything. You're trying it."

I liked it. I think I've made it before, a long time ago. Quinoa is a gluten-free grass-like seed that contains all 9 essential amino acids. It cooked up super-fast! I used half water/half broth and added chopped up broccoli, onion, and minced garlic + salt and pepper. I agree with Ryan that I probably wouldn't eat this all the time but once a week is doable. I'm thinking there are tons of variations depending on what you add to it. Ryan said it tasted like ground-up corn? I thought it resembled rice. Kind of.



Don't worry. I don't eat grass-like seeds all the time. I ate this before my workout yesterday. BECAUSE I was at Kid-to-Kid and Culver's is right there. And it was 5,000 degrees outside.

We watched the Country Music Festival last night...all three hours of it but luckily fast-forwarded through most of the commercials. Every song was awesome! I could have done with less hair swinging from Taylor Swift during "the highway don't care" but it was funny because I looked down and saw Karlyn bobbing her head back and forth. So cute.

She kept asking us during the show if we "wanted to go camping." The campgrounds were just in her room though. Ryan asked if we could go camping in the living room. I think she picks up these ideas from Dora. Sooo, no more Dora. JK.

Update on baby Kaden. I've been following Diana on her facebook page. They are still at Children's in Dallas and while they have seen a little improvement from his heart, it is looking like a transplant will be necessary. They got approved by their insurance for that which is good.

It just hit me on the way home and I had to fight back tears. She wrote another update explaining that while this transplant is needed, it is not what they would have chosen. Obviously. Someone else will have to lose their child in order for Kaden to live. That is unbelievably tough. I can't imagine.

Please continue to pray that God wraps His arms tight around this family and that they feel His presence deeply. I pray that Diana doesn't have to lose another baby.

You can pray for us too. I know we're not in the hospital waiting to find out if our son will live but we have walked the path of loss. I am desperately ready for Karlyn to have a sibling and to get to be a "big sister!" As much as part of me says, "God don't let it happen until everything can go right", the other part says "I'm ready NOW." We know God has a plan for our lives and our family but as each month brings a new wave of hope and disappointment, it gets harder. I want to have a story to tell, one that brings Him glory and shouts that He was authoring it all the entire time. I want to carry another baby and bring one home. So we keep on hoping. And trying to trust.

I know Karlyn will love it because I'm finding more and more babies wrapped up in my bed when I go to sleep each night. Sweet little Caillou. ;>

I baked! ~Cowboy Cookies~


Ever find an exciting new recipe, gather the first few ingredients, start dumping things in a bowl, and then find you're out of (fill-in-the-blank)?

I did that last night. No baking soda! 

BUMMER.

I thought about asking a neighbor for some, ya know, like back in the good ol' days but I decided instead to make Ryan buy some on his way home from work. He sweetly obliged.

These cookies are so good! I really liked them and when my toddler happily scarfs down two as well, I consider it a recipe success. It's not my recipe but I'll gladly share it here. Don't be scared by the avocado. Or the apple cider vinegar. I thought these were even yummier this morning after an overnight stay in the fridge.

Aren't they purty?? (said in a cowboy voice) They are more muffin-like than cookie and I threw a couple in the freezer too to save. *I used cows milk and dark chocolate chips.* I will definitely make these again!

The best banana bread you'll ever eat


I'm kind-of in a funk after work today but I'm going to press on and not talk about how much I love working in a room full of all women share this awesome recipe with you.
 
Before I do though, do you ever feel stuck?  For a reason?  This is where I'm at.  It has come up many times over the past few years and yet I'm still here.  I'll think, is this really where I'm supposed to be?  I feel like this is where God has me because when I've tried to change the situation, it doesn't work.  I wind up exactly where I'm at, even when it's not my passion.  Even though I'm not the best at it.  Just thinking out loud. 
 
On to the bread.  I've been meaning to post this recipe for forever but just haven't.  I wish I could take credit for it!  It. is. so. good.  AND IT'S HEALTHY!  For real.  Not like "Pinterest-this-is-only-100-calories-healthy" but actually healthy.  Everything inside is good for you.
 
I wish I had better pictures :-/  In fact, these pics are from when I added pumpkin instead of all banana.  That's why it's orange-y.  Either way is delish. 

 Here is the original recipe!

And here are some specifics I used~
 
1/8 c. less flour
3 T. butter & 4 T. oil
1 1/2 t. cinnamon
3 super ripe bananas
5 T. honey

*I skipped the stevia

You really can't mess this up too much by playing around with amounts.  And the coconut flour I used is this one.  I need to order more because we're out!  Very affordable and I made quite a few loaves from the can.





It is super moist, naturally sweet, and SO, STINKING, GOOD.  Yum.  Enjoy!
 
Speaking of healthy...would someone make these for me please?  ;-)
